Tuna & leek quiche

A perfect dish for lunch or to have as a snack. Perfectly balanced with protein and fat to keep your blood sugar levels stable. As a lower carbohydrate meal, this is ideal for rest or easy training days.

Homemade tuna and leek quiche


  • Puff pastry

  • 1 can tuna fish

  • 2 leek sticks

  • 1 carrot

  • 5-6 free range eggs

  • 100 g feta cheese

  • Coconut oil or butter

  • Salt & pepper

  • 2 tsp. cumin powder

Tuna & leek quiche

Preheat the oven at 180 degrees. Chop up the leek and cook in a pan with 1 tsp. coconut oil, salt, pepper and cumin to taste. Grate up the carrot and add it and the tuna to the cooked leek. Leave the mix on the side to cool down. Using a paper towel, grease the oven plate you will use for the quiche with a thin layer of coconut oil or butter. Line the pastry in the dish to cover all sides. Once cool, add the leek, carrot and tuna mix onto the pastry. Scramble up the eggs and pour over the quiche. Crumble the feta on top and place in the oven for approx. 15-20 minutes.
