Healthy oat waffles (savoury & sweet)

We´ve recently bought a waffle maker and I must say it´s great! Waffles have always been seen as more of a dessert or unhealthy breakfast but they can actually be a great nutritious breakfast before training or a busy day if you make them with the right ingredients. Follow this recipe and you´ll do just that!


Healthy oat waffles

Makes 5 waffles (15 cm diameter)


Ingredients:

  • 1,5 cups (approx. 130g oat flour)

  • 1,5 tsp. baking powder

  • 3/4 cup unsweetened oat or almond milk (approx. 180 ml)

  • Approx. 45g butter or 2 tbsp. coconut oil

  • 2 eggs

  • 1/2 tsp. cinnamon or vanilla extract (I highly recommend vanilla!)

  • Salt for taste (approx. 1/2 tsp. but do a taste test)

  • 1 flat tbsp. brown sugar (optional)


Topping ideas:


Sweet

  • Banana slices

  • Thinly sliced apple

  • Almond butter

  • Fresh berries

  • Honey

  • Mixed seeds

Savoury

  • Cottage cheese

  • Salami or prosciutto

  • Feta cheese

  • Tuna fish mixed with pesto

  • Hummus

  • Cherry tomatoes

  • Salt & pepper


Start by melting the butter or coconut oil in a double boiling pot. Once the butter/ oil is melted, using two seperate bowls, place the dry ingredients into one bowl and the wet ingredients into the other and mix each. Once well mixed, slowly pour the wet ingredients into the dry. Stir until a smooth batter is formed.


Preheat the waffle maker and start making them waffles!
